Shared Beat brings medical care, health education and scholarships to the beautiful people that live in the poorest communities in Guatemala. I have had the privilege of going with Shared Beat on several medical missions and have witnessed the amazing work done by this group. They change lives through health and education. Cook to Share; A Taste of Love and Hope is a fun way to support this great cause. Vote for my Sambal Tofu Stir Fry and make a difference. 

Sambal Stir Fry

Marinade:

  • 1/2 cup Soy Sauce
  • 1/4 Rice Vinegar
  • 2 Tbsp Toasted Sesame Seed Oil
  • 1 Tbsp Sambal Chili Paste
  • 4 cloves garlic, minced
  • 2 tsp minced ginger

Stir Fry

  • 16 oz firm tofu
  • 1 cup broccoli florets
  • 1 carrot, sliced
  • 1 cup mushrooms, sliced
  • 3 green onions 
  • 2 Tbsp canola oil
  • 2 Tbsp peanut oil
  • Rice

Mix all ingredients of marinade together. Slice tofu into planks, place between paper towels and press for approximately 15 minutes with a heavy object (I use a heavy pot). Once liquid is pressed out of tofu, cut into 1/2 inch cubes. Place cubes in marinade and let sit for about 15 minutes until all the flavors are absorbed. 

Heat a wok or heavy frying pan over a medium high heat (a little closer to high than medium). Add 1 Tbsp canola oil and 1 Tbsp peanut oil to pan.  Use a slotted spoon to drain off the excess marinade (save marainade) . Transfer drained toful into the heated pan. Fry until toful edges are crispy. Remove tofu to a plate covered with a paper towel to remove any excess oil. Wipe out pan and add the last of the oils (1 Tbsp canola and 1 Tbsp peanut oil). When the oils are hot add the vegetables. Saute until just tender but still crisp. Add the tofu to pan. For extra flavor, pour the remaining marinade over the stir fry mixture. Serve over rice.
